Custom Lamb Processing

After the lamb is harvested it is hung in the cooler and monitored until the lamb is ready for processing, usually lamb hang 3 to 7 days. The lamb is then processed according to the customers specifications. All cuts are then vacuum packed. The lamb is then placed into a sharp freeze freezer. The lamb will remain in the freezer until the customer comes for pickup.
